WORK THROUGH THE SEASONS
Aligned with the rhythm of the seasons, our wine production process allows us to craft wines that boast a myriad of flavors.
We follow strict guidelines to obtain quality products and we have been awarded the HVE (high environmental value) charter :
Spring ?
We carry out :
- Disbudding to reduce yields and thin out the stumps
- Lifting for trellised plots (about 80% of the estate)
- Shoot thinning
- Green harvesting for over-productive plots or young vines.
We also use tractors for tilling the soil, trimming the shoots and spraying.
Summer ?
From mid-July onwards, we harvest table grapes, starting with prima and then cardinal, followed by Danlas, Muscat d'Hambourg and Alphonse Lavallée.
At the end of August, we have an overlap of harvests, table grapes, wine grapes (beginning, Muscats)
Once the harvest is in, we're ready to make the new vintage.
Autumn ?
Autumn,
In autumn, our vineyards take a break to enjoy the last of the sunshine.
But on the estate, the olive harvest is gettint underway.
In the winery, life is busy with the decanting, racking and blending processes.
Winter ?
In winter, we prune and crush the vine shoots.
We also tie up the young plantations, prune the olive trees and maintain the soil by ploughing with a tractor.
In the cellar, it's time to start blending, which is the winemaker's key task.
